Crusty Baked Vegetables1 Cup Texas Toast Honey Butter Flavored Croutons, crushed
1/4 Cup olive oil, divided 1 large red onion, sliced 2 cloves garlic, minced 2 yellow squash, sliced 2 zucchini, sliced 6 roma tomatoes, sliced 1 tsp Italian seasoning 2 Tbsp fresh parsley, chopped Preheat oven to 350 degrees. Butter a shallow baking dish. Heat 2 Tbsp oil in a skillet, add onion and saute until tender. Add garlic and cook an additional minute. Remove from heat. Place onion mixture into bottom of prepared baking dish. Layer remaining vegetables in concetric circles or rows. Season vegetables with salt, pepper and seasoning. Cover with crushed croutons. Bake for 25-30 minutes. Sprinkle with parsley and serve. |

Zucchini Mock Crab Cakes2 Cups grated zucchini
1 medium onion, grated 1/4 tsp Old Bay seasoning Pepper 1 egg, beaten 1- 1 1/2 Cups cracker crumbs Mix all ingredients well. Shape into cakes and fry in oil until golden brown. Shapes easier if it sits for 30 minutes first. |
Zucchini Au GratinSlice zucchini into 9x13 pan (think scalloped potatoes)
Pour 1/4 cup melted butter over zucchini. Sprinkle 8 oz. mozzarella cheese over zucchini. Mix 1/4 cup melted butter, 1/4 cup Parmesan cheese and 1/2 cup bread crumbs together. Crumble over zucchini. Bake at 350* about 40 minutes. |
Chocolate Zucchini Cake
Cream: 1/2 cup butter
1 brown banana
1 cup sugar
1 tsp vanilla
1 egg
1/2 cup sour milk
Add: 2 1/2 cup flour
4 Tbsp cocoa
2 tsp baking soda
Stir in: 2 cups zucchini, shredded. Spread into a greased 9x13 cake pan.
Top with: 12 oz. chocolate chips
Bake at 325* for 45-50 minutes.

Zucchini Casserole20 oz. zucchini, cut up and boiled about 6 minutes. Drain.
1 lg onion, browned in 1 stick of butter 2 grated carrots, added to onions. 1 can cream of mushroom soup and 1 cup sour cream. Mix with onions and carrots. Mix in cooked zucchini. Mix in 1 box stuffing mix. Bake at 325* for 1/2 hour. Wonderful for picnics! You can add 2 cups of chopped, cooked chicken for a full meal. Thanks to Aunt Mollie for these 2 recipes! |
Zucchini Alfredo
Ingredients: 5 large zucchini, about 2 1/2 lbs. total
1 tsp salt
1 Tbsp. Minced Garlic
2 Tbsp. Olive Oil
8 oz. Cream Cheese
3/4 Cup Half-and-Half, Light Cream or Whole Milk
1/2 Cup Parmesan Cheese
Pepper
Slice zucchini into long, thin strips (think fettuccine noodles). Place them into a colander, sprinkling the salt between layers of the zucchini. Let it sit and sweat for 1 hour. Rinse and Drain.
In a large skillet, fry the garlic and zucchini in Olive Oil until the zucchini is crisp-tender (although I prefer to fry mine until the zucchini feels like the limp noodle that it is supposed to resemble). Transfer to a serving bowl.
In the same large skillet, heat the Cream Cheese and milk, mixing until smooth. Stir in the Parmesan cheese. Pour over the zucchini. Sprinkle with pepper and serve.
For a one-dish meal, add cooked chicken or shrimp.
